For Pork Ribs, Shoulders, Beef Brisket and Poultry, rub generously into meats 15-30 minutes prior to cooking or refrigerate overnight. Works best for grilling over charcoal or wood fire. Target temp 225 degrees.  Remember, low and slow--no direct flame with target temperature of 225 degrees
